Estimated Time:
- Preparation: 20 minutes
- Marinating: 1 hour
- Cooking: 20 minutes
- Total Time: 1 hour 40 minutes
Number of Servings:
- Serves 4 people
Ingredients:
For the Chicken:
- 1 1/2 pounds chicken thighs, boneless and skinless
- 1/2 cup soy sauce
- 1/4 cup mirin (sweet rice wine)
- 1/4 cup sake (or additional mirin if unavailable)
- 1/4 cup sugar
- 2 cloves garlic, minced
- 1 tablespoon ginger, grated
- 1/2 teaspoon black pepper
- 1 cup cornstarch (for coating)
- Vegetable oil (for frying)
For the Teriyaki Sauce:
- 1/2 cup soy sauce
- 1/4 cup mirin
- 1/4 cup sake
- 1/4 cup sugar
- 1 tablespoon cornstarch mixed with 2 tablespoons water (slurry)
Instructions:
-
Prepare the Marinade: In a large bowl, combine the soy sauce, mirin, sake, sugar, garlic, ginger, and black pepper. Mix well until the sugar is dissolved.
-
Marinate the Chicken: Cut the chicken thighs into bite-sized pieces and add them to the marinade. Cover and refrigerate for at least 1 hour to let the flavors meld.
-
Prepare the Teriyaki Sauce: In a small saucepan, combine the soy sauce, mirin, sake, and sugar. Bring to a simmer over medium heat, stirring occasionally. Add the cornstarch slurry and continue to cook, stirring, until the sauce thickens. Remove from heat and set aside.
-
Coat the Chicken: After marinating, remove the chicken pieces from the marinade and pat them dry with paper towels. Dredge each piece in cornstarch, ensuring an even coat. Shake off any excess.
-
Heat the Oil: Heat vegetable oil in your Bazova ceramic-coated non-stick pan over medium-high heat. The oil should be about 1 inch deep, and the temperature should reach 350°F (175°C).
-
Fry the Chicken: Carefully place the coated chicken pieces into the hot oil, frying in batches to avoid overcrowding. Fry each piece for about 4-5 minutes, turning occasionally, until golden brown and cooked through. Use a slotted spoon to transfer the fried chicken to a paper towel-lined plate to drain excess oil.
-
Toss in Teriyaki Sauce: Once all the chicken is fried, place it in a large bowl. Pour the prepared teriyaki sauce over the chicken and toss to coat evenly.
-
Serve and Enjoy: Serve your Teriyaki Fried Chicken hot, garnished with sesame seeds and chopped green onions if desired. Pair it with steamed rice and sautéed vegetables for a complete meal.
